Rum Balls

Another Christmas family favourite.  Oh and yes another alcohol filled family recipe.  These are not so bad and really are made with just a dash of Sherry, usually.  Why they are not called Sherry balls I do not know.  I don't have much of a story here except that these are not just a Christmas favourite.  They make an appearance at all of our family get togethers, and Rum Balls are always one of the tastiest things on the table.  So simple to make you can keep them in the fridge for a few days before serving them.  These bite size balls of bliss are easy to eat in a function atmosphere, no need for a plate you can can just pop them into your mouth whole.
With no further a due here is the recipe;

Rum Balls
1 packet of Teddy Bear biscuits (you can use Marie, Malt or even Digestives)
1 cup of desiccated or shredded coconut (some more to coat the balls)
1 Table spoon Cocoa Powder
Splash Vanilla Essence
Splash of Sherry
1 tin of sweetened condensed milk

In food processor of blender crush the biscuits until fine.  Then add the coconut and cocoa powder, mix.  Then add splash of vanilla and Sherry, mix.  Lastly add the sweetened condensed milk and mix well.  Press the mixture down into the bowl with your hand and leave to sit for about 20mins.
Then using a teaspoon to scoops out the mixture, roll small balls and roll in some coconut to finish.
These can be made a few days in advance and stored i a sealed container in the fridge.

So simple and so yummy.
